Flavor Profile
Brilliant powder-colored shade with coppery nuances. Refined, pinpoint perlage, with copious and persistent bubbles. The nose is balanced between the fragrance and expressive strength of Aglianico, with beautiful flavors of dog rose and peach, pomegranate seeds and currants, then a hint of rock salt and almond. Properly balanced body with perfect fresh-savory edge, responsive fruity tones that are enriched by the long persistence of notes of peony and pink grapefruit.

Maceration with the skins : cold pre-fermentation of the base wine for 6 hours
Vinification: soft pressing of the base wine grapes which then ferments in the bottle for approximately two months
Aging: 72 months on the yeasts before disgorgement.
