Vinification and Ageing Harvest: The grapes picked in boxes at dawn are processed whole directly in the press.
Vinification: After a short pre-fermentation maceration, only the flower must is extracted for a yield of 40%.
Fermentation: 20-25 days at 13°C.
According to the classic method, the base wine is re-fermented in the bottle for about 40 days; this is followed by an ageing period on the lees of 100 months.

MADE FROM ORGANIC GRAPES WITH “SUOLO E SALUTE” CERTIFICATION
Brilliant powder-coloured shade with coppery nuances. Refined, pin-point perlage, with copious and persistent bubbles. The nose is poised between the fragrance and expressive power of Aglianico, with beautiful hints of rosehips and peach, pomegranate seeds and currants, then a hint of rock salt and almond. Well-balanced body with perfect fresh-savoury side, responding fruity tones that are enriched in the long persistence by notes of peony and pink grapefruit.

Soft mousse with very fine-grained and very persistent perlage. The colour is an onion veil pink with copper highlights. The aroma is complex, characterised by fruity and floral notes, enriched by pleasant hints of bread crust. The taste expresses a refined elegance, accompanied by pleasant freshness and pleasant creaminess of the bubble.
