The average yield per hectare is less of 65 quintals. Pruining, defoliation and the frequently thinning out to obtain grapes that will be perfect. During veraison, a lot of grapes are cut: in this way the grapes that remain on the plant can concentrate of polyphenolic and aromatic substances, to obtain quality wines, balanced and elegant.

METHODS PROVEN BY TRADITION
Sometimes to plow the land we use a horse. In fact, it is proven by tradition that the horse’s hoof does not compact the soil and does not damage the important micro fauna that lives there, allowing to the soil to breathe better. In this way it can give to the plant more to produce the best grapes possible, always starting from the assumption that making great wine requires perfect grapes. The plow brushes the young roots without damages. For this reason great importance is given to working in the vineyard.
An idea. Then several experiment in the vineyard and in the winery to discover the great wine to represent the grapes. Every Carvinea’s bottle has an own identity and a great personality. This is Carvinea’s style.
ENTRY LEVEL? NO THANKS
Our winery is small. We have 9 hectars of vines. We could produce more than we do. We produce 1 bottle of wine for every plants. We produce wine for passion and for this reason we can’t, and don’t want have a distinction of our bottles.
