Carvinea’s average yield per hectare ranges from 4000 to 6500 Kg. The best grapes are achieved through pruning, defoliation and thinning. During ripening many grapes are cut and left on the ground. This gives the grapes left on the plant the chance to reach a higher concentration level of polyphenol compounds and aromatic substances, enabling the making of balanced and elegant wines. The vineyards are meticulously cared for and watched really closely, as we strongly believe that excellent wines can only be made from excellent grapes.
Freshness and Elegance
Carvinea’s main priority is to reach qualities of freshness and elegance in each wine. The wines are supposed to surprise you, satisfy you and to whisper to you its features, deriving from the tufaceous soil next to the sea.
Research and Tradition in the vineyard 
When necessary, a horse is used to plow the soil. It is proven by tradition that the horse’s hoof does not pack the soil nor damage the microfauna living in it. Horse-plowing allows the soil to breathe better and to supply the plant with everything it needs to produce the best grapes. The plow also laps the roots of the plants without damaging them: every little careful detail contributes to the growth of the best grapes.
Ottavianello: the rebirth of an ancient autochtonous variety
Curiosity led us to rediscover a variety destined to become forgotten. Together with Primitivo and Negroamaro we are now proud to introduce OTTO, a Ottavianello varietal. Carvinea was the first to believe in this extraordinary autochthonous variety, which had been disregarded due to the preponderant production of Primitivo and Negroamaro. OTTO is particularly enjoyable thanks to its roundness and significant structure.
Woods is the cradle of wine
Various french wooden barriques are used at Carvinea in order to give balance to our wines, and not to release overpowering aromas.
