Vinification and ageing
Harvesting: Manual harvesting during the cooler hours of the day. The grapes are put into boxes Manual selection of the when at the winery and subsequent crushing.
Vinification: Maceration with the skins in the press for several hours. Extraction of the must and subsequent sedimentation at 10°C.
Racking of the clear must and subsequent fermentation at a controlled temperature (16°C).
Maturation in steel tanks on its own yeasts, with continuous lees stirrings.
It has a delicate coral pink color. The nose is full, with floral hints which are perfectly integrated with grapefruit and apricot aromas. The sip is attractive, it presents freshness and savouriness. The finish is fresh and intense citrus.
Bottle ageing: minimum 4 months

Bright salmon pink colour with intermittent orange highlights. It imparts delicious tones of grenadine and stark apple, red fruit jelly, aromas of geranium and a burst of aromatic herbs reminiscent of the terroir. Soft in the taste incipit, it is richly savoury and balanced, revealing crisp fruit flavours in the finish.

"I was a guest of a farmer from Ostuni who produces for himself and his friends a few hundred liters of wine obtained from some strains of Ottavianello planted in the countryside surrounding his home. Beyond the many technical flaws found in tasting, intrigued me with some sublime taste-olfactory notes. I decided that I should try to give luster to this forgotten variety and after four years of research I am excited about Otto and ready to bet on the bright future that awaits him".
