Vinification and ageing
Harvesting: Manual harvesting during the cooler hours of the day. The grapes are put into boxes Manual selection of the when at the winery and subsequent crushing.
Vinification: Maceration with the skins in the press for several hours. Extraction of the must and subsequent sedimentation at 10°C.
Racking of the clear must and subsequent fermentation at a controlled temperature (16°C).
Maturation in steel tanks on its own yeasts, with continuous lees stirrings.
Organoleptic description
It has a delicate coral pink color. The nose is full, with floral hints which are perfectly integrated with grapefruit and apricot aromas. The sip is attractive, it presents freshness and savouriness. The finish is fresh and intense citrus.

Shining, concentrated ruby mantle. A very pure nose, sketched on the gentle features of the terroir: black cherry, swirling ensemble of wild fruits, mint tobacco and myrtle, a hint of rhubarb and juniper berries. It has explosive personality on the palate, where the flavour expands unrestrainedly, enriching itself with notes of potpourri and marine scrub, in a growing progression marked by creamy tannins and a finish of disarming roundness. Extremely long persistence, to open applause.

A flaming ruby colour, denser in the centre of the glass, from which rises a fine swirl of aromas of sour cherries and cherries, red roses and Caribbean cedar, coffee, a deep dowry of dark spices, a caress of cinnamon and a special sylvan note. The palate is stupendous, truly material: the structure measured to the micron is complemented by superior phenolic mass; complex and vital, it offers an extraordinarily long and varied persistence.

Beautiful ruby colour of great luminosity. The nose is stunningly beautiful: refined aromas of ripe blackberry and cassis on the attack, followed by tones of wild strawberries, mentholated notes and aromatic herbs, and a precious touch of English leather that makes it even more noble. In the mouth it is savoury, full-bodied, with an elegant balance between freshness and perfectly ripe tannin. Completing the harmony is a long, intense finish with hints of Mediterranean scrub.

According to the classic method, the base wine is re-fermented in the bottle for about 40 days; this is followed by an ageing period on the lees of 100 months.
